I had a taste for black eyed peas a couple of days ago and I just knew that I had some on hand. When I looked in my pantry, though, I actually had a dried bean mixture that was unopened and included black eyed peas. So, I decided to work with what I had and alter the recipe a bit. Along with the black eyed peas, the bean mixture includes black beans, navy beans, and barley. Barley is a grain and reminds me of oatmeal. It's a great alternative to rice or pasta. Barley has a good amount of fiber to help with digestion and regularity--1 cup provides about 13 grams of fiber. Similar to many other whole grains, barley is protective against cardiovascular disease and diabetes. This recipe is very easy to make and although I made it on the stovetop, another option would be to throw everything in a crockpot and carry on with the rest of your day as it cooks. You will need: 4 stalks of celery, chopped 2 large bugs bunny carrots, diced 1 medium red onion, sliced 5 cloves of garlic, finely chopped 1 tbsp canola oil About 1 pound of the dried bean mixture (or whatever dried beans you have available), soaked overnight 6 cups water 1 tsp + 1/4 tsp salt 1/4 tsp black pepper 1/4 tsp smoked paprika 1/4 tsp nutmeg 1/4 tsp cayenne pepper 1. Heat a large pot over medium-high heat. Add canola oil and vegetables to heated pot, sautéing veggies for about 5-7 minutes. 2. Add the rinsed and drained dried beans, water, seasonings, and 1 tsp of the salt and bring to a boil. 3. Turn heat to low and allow to simmer covered for 1.5 hours. 4. Remove top and return soup to a boil. Stir constantly for a few minutes until soup starts to thicken. 5. Turn heat off and stir in remaining 1/4 tsp salt. Serves 8. Nutrition Info (Per Serving): Calories: 238 Fat: 2 g Sodium: 374 mg Carbohydrates: 40 g Fiber: 14 g Protein: 13 g This soup pairs well with cornbread or whole grain crackers.
